Dented cans, rust, and when a can is not safe
A can keeps food for years by keeping everything else out. Utah State University Extension, writing about food held for emergencies, states the proposition in one clause: commercially canned food in metal or glass will remain safe to eat "as long as the seal has not been broken" (USU Extension, Storing Canned Goods).
That makes the inspection easy to describe. You are not judging the food. You are judging the seal, and the dent, the rust patch and the bulge are three different kinds of evidence about it.
A body dent and a seam dent are different problems
University of Nebraska-Lincoln Extension separates dents by depth and by location. A small dent in a can that is otherwise in good shape does not make the food unsafe. A deep one does, and the page gives a test you can run with a hand rather than a ruler: "A deep dent is one that you can lay your finger into." Those get thrown out (UNL Food, Is This Food Still Safe to Eat?, reviewed 2022).
Location decides more than depth does. The seams are where the can is joined, and UNL's warning is specific to them: a sharp dent on the top seam or the side seam can damage the seam and let bacteria into the can. The instruction that follows is not graded the way the body-dent rule is. Any can with a deep dent on a seam goes, whatever the rest of it looks like.
In practice that means a thumb around the rim and down the side seam before you form an opinion about the middle. A shallow dish in the wall of a can that came home at the bottom of a full bag is cosmetic. The same knock landing on the rim is not.
Clemson Cooperative Extension applies the same rule one step earlier, in the store: check dented cans and jars for leakage and rust before buying, and leave the ones with cracks or bulging lids (Clemson HGIC 3505, Safe Handling of Canned Goods, updated June 2024). Damaged cans are often the discounted ones, and the discount does not repair the seam.
Rust that rubs off, and rust that has gone through
Rust is the same question asked more slowly: has the metal been breached.
UNL splits it in two. Surface rust that comes away when you rub it with a finger or a paper towel is not serious, and those cans can be kept. Heavy rust is a different finding, because a badly rusted can may have tiny holes in it, and a hole is a way in. Rust discovered on the inside of the can after it is opened ends the question — that food is not eaten.
Most of the rust a pantry produces is made slowly, and by where the cans sit. Utah State's storage guidance is to keep metal cans off the floor, especially off bare concrete, because moisture wicks up into them and encourages rusting. The same page rules out the other end of the range: do not let sealed cans or jars freeze, because freezing changes food texture and leads to rust, burst cans and broken seals.
Bulging, leaking and spurting are not judgment calls
Everything above involves some judgment. These do not.
Clemson states it in a single line: "A bulging lid or leaking can is a sign of spoilage." Utah State's discard list is the same set written as a pantry rule — badly dented, bulging, rusty or leaky containers go, along with any jar whose seal has broken. Add the one that only shows itself at the last second: a can that spurts when it is opened. Put it down.
None of these deserve a second opinion, and none of them get a taste.
The botulism part, stated plainly
The hard rules exist because of one organism. Botulism is a poisoning caused by a toxin that Clostridium botulinum produces as it grows, and the conditions it grows in describe a sealed can of vegetables almost exactly. Clemson's factsheet says the spores need an oxygen-depleted, low-acid environment and prefer temperatures between 40 °F and 120 °F (Clemson HGIC 3680, Botulism, reviewed May 2020). A pantry shelf at 68 °F is inside that band.
Two facts about the toxin are worth carrying around.
The first is that it gives you nothing to detect. Purdue Extension, relaying material from the Centers for Disease Control and Prevention, puts it as plainly as it can be put: "You cannot see, smell, or taste botulinum toxin" (Purdue Extension, August 2020), and the page adds that even a small taste can be deadly. That is why the smell of the contents has no standing in this decision, and why Clemson's instruction is not to taste food from a swollen container, or food that is foamy, or food with a bad odor.
The second is that the container may not look like much either. The National Center for Home Food Preservation notes that spoiled low-acid foods, tomatoes included, may show a different kind of spoilage evidence than you expect, or very little of it (NCHFP, Identifying and Handling Spoiled Canned Food, adapted from the USDA's Complete Guide to Home Canning). An ordinary appearance is weak evidence, which is the reason the seal gets inspected rather than the contents.
The risk is not spread evenly. The foods most often involved are home-canned low-acid ones, and Clemson names them: asparagus, corn, green beans, lima beans, mushrooms, peppers, sauces, soups, meats, fish and poultry. Its precaution for home-canned low-acid food is to heat it to a rolling boil, then cover and boil it before tasting — 20 minutes for corn, spinach and meats, 10 minutes for the rest. Commercial products are not exempt, and Clemson says commercial foods have also been involved in outbreaks. But the ordinary case, a sound can off a store shelf, is the case the inspection above already covers.
Symptoms usually appear within a day of eating the food, Clemson says, though they can take up to ten days, and they include blurred or double vision, general weakness, poor reflexes and difficulty swallowing. That is a same-day trip to a doctor rather than something to sleep on.
What to do with a can you do not trust
Do not open it to check, and do not pour it down the sink. The NCHFP disposal instructions separate two cases.
If the container is still sealed, bag it. A heavy garbage bag, closed, into a regular trash container or to a landfill.
If it is unsealed, open or leaking, it is detoxified first. Wearing disposable gloves, lay the container and its lid on their sides in a stock pot of 8 quarts or more, add water until it covers them by at least an inch, put a lid on the pot and boil for 30 minutes, which is what the page says it takes to detoxify the food and every part of the container. Let it cool, bag it as above, then treat every surface it touched: spray or wet them with a fresh solution of one part unscented liquid household chlorine bleach, at 5 to 6 percent sodium hypochlorite, to five parts clean water, let it stand 30 minutes, wipe with paper towels, and do it a second time. Wash everything afterwards and throw the gloves away.
Clemson supplies the reason for the bag rather than the open bin: spoiled canned food is discarded so that it will not be eaten by humans or pets.
Storage decides how many cans you ever have to judge
Cans mostly fail where they are kept. Clemson's storage range for canned goods is 50 to 70 °F, and it warns that storage time drops significantly above 75 °F, which rules out the cupboard beside the stove and the shelf in an uninsulated garage. Utah State's version adds the specifics: cool, dark and dry, away from furnaces, pipes and places where the temperature swings.
Within that range, Clemson's storage recommendations are 12 to 18 months for high-acid canned foods, 2 to 5 years for low-acid ones, and one year for home-canned food of every type. Utah State says the same for home canning and adds the outer bound: use it before two years. Rotation is what keeps a can from reaching the age where the shelf has time to do damage, and first in, first out at home covers the mechanics of that.
One rule outlasts the rest
Nothing above asks you to taste anything, and that is deliberate. The contents are not the test. The seal is the test, and a can that fails it goes into a bag whatever it smells like.
